What makes Pérez Veros wine special is the nature of the soil and the meticulous manufacturing process at the winery.

Jesús Pérez Veros

The farm is located in Aldehorno (Segovia) and surrounding municipalities, and grows different crops, cereals, sunflowers and pulses. It uses the techniques of conservation tillage, minimum tillage and direct seeding, seeking to ensure sustainable farming and rural development. It transforms the raw materials it produces.

Vine-growing is one of its activities. It grows the variety Tempranillo, also known as Tinta del País, which it transforms into wine at its winery.

ALDEKOA WINERY

Aldekoa Winery first opened in 2006, with a vineyard measuring nearly 30 ha. Its wines are marketed under the Pérez Veros brand. The project is developed by two young winegrowers, the Pérez Veros brothers. It is designed to utilise and offer the world a product others have already claimed as their own. The brothers are entrepreneurs who seek to offer originality and new sensations within the world of wine.

Their mission is to produce quality grapes using the techniques of green pruning, removing lateral shoots and vine thinning. The brothers, Pablo and Jesús Pérez Veros, apply their skills as professional winegrowers, seeking the highest quality grapes, while using environmentally friendly tillage techniques.

In the winery, production takes place under the oenological management of Jorge González, with zero or minimum intervention, to transfer the minerality and diversity of the soil and the characteristics of the grapes to the wine, at an altitude of 1,000 m.

RIBERA DEL DUERO

The Winery is located in the Ribera del Duero region, specifically, in the municipality of Aldehorno. In the north of the province of Segovia, on the Burgos border, this town has a strong tradition in vine farming, and is firmly rooted in wine culture. Pérez Veros is the first Segovian winery to obtain registration under the Ribera del Duero denomination of origin.

You can visit the winery all year round, from Monday to Sunday.

Our opening times are:
Monday to Thursday, 9am–6pm || Friday, 9am–2pm.
On Friday afternoon, Saturday and Sunday, we recommend making an appointment beforehand, so we can prepare the visit to suit you.

OUR VINEYARDS

Pérez Veros winery produces its wines using the grape variety Tinta del País, also known as Tinta Fina or Tempranillo.

The vineyards, which are between 15 and 30 years old, are located in the Segovian municipality of Aldehorno, and the Burgos municipalities of Haza and Fuentenebro, at an altitude of nearly 1,000 m. This feature is what makes these wines singular and differentiates them from the wine produced in the rest of the Ribera del Duero region.

Care of the vineyards is meticulous, and tasks like grape selection take place in the vineyard, with green pruning and vine thinning.

THE NATURE OF OUR WINES

Pérez Veros wines reflect our respect for the vine-growing tradition.

All production processes aim to maintain the authenticity of the wines.

THE GRAPE

The characteristics of the vineyard, its soil and altitude, allow the grapes to be harvested with an optimal balance between acidity and sweetness, which makes acidity corrections unnecessary.

In these conditions for slow ripening, with cool nights and hot days, the grapes get stronger and their skins thicken. It is the skins that are behind part of the personality of our wines, since that is where the extract, colour and many of the aromas of our wines are stored. Given the altitude, our harvest takes place a few days later than the average for the Ribera del Duero region.

PRODUCTION

To respect the authenticity of the wines and reinforce the features of their variety and terroir, we work with traditional fermentation agents. This involves patience and observation, to introduce the best populations of indigenous yeasts into the must. These populations are developed in the vineyard, as the grape ripens. Introducing these yeast strains gives our wines greater personality, increasing the feeling of terroir wine.

We do the same during malolactic fermentation, where we leave the indigenous bacteria populations to adapt to the wine and perform this second, delicate fermentation process.

AGEING

We age our wines in 225 l Bordeaux barrels. We use French and American oak, depending on the degree of adjustment of the wine, and its level of ageing with each type of wood. Recently, we have also started using Spanish oak barrels.

During ageing in the barrel, we perform periodic bâtonnage, which involves stirring the lees in the barrel. This is how we make our wines more harmonious, complex and smooth on the palate.

All our wines, once bottled, are subject to a second ageing process, in the bottle, which harmonises all the olfactory and gustatory wealth of our wines. This is the final stage in the ageing process.

Reserva 2011 – Número Uno de Pérez Veros

A select harvest from the alkaline soils of the Blancares ensures optimal alcoholic and phenolic ripeness. The altitude of the vineyard is what provides good acidity balance. The orography and gobelet trained vines ensure highly concentrated aromas and colour. Vatting is direct to barrel, where malolactic fermentation takes place. Finally, the wine is decanted into a new barrel for ageing, for a further 14 months, with its fine lees.

Oaked Red 2014

Visual phase
Cherry colour with violet hues.

Aromatic phase
Notes of red berries (particularly mature strawberry), and purple berries (blackberries and plums), with light spice and mineral layers underneath. This is accompanied by a base of sweet vanilla and cinnamon spices. There are hints of dough.

Gustatory phase
There is an unctuous, glyceric mid-palate, allowing a high concentration of “sweet” tannins to fill the mouth, leaving a pleasant aftertaste.

Young Red 2015

Visual phase
Intense cherry colour with violet hues.

Aromatic phase
Notes of ripe red berries (strawberry and raspberry) and liquorice, accompanied by a base of fresh must and fine mineral nuances. Notes of terroir and mountain, under thyme, rosemary and lavender.

Gustatory phase
Fresh at first, with powerful aromatic intensity on the palate. A pleasant mid-palate, with mild, enveloping tannins.

Rosé 2015

Visual phase
Lively, bright violet pink.

Aromatic phase
On the nose, there is a high concentration of red berry aromas (cherry, strawberry and raspberry), with light floral depths (violet and rose).

Gustatory phase
On the palate it is fresh, intense and very fruity.

Pérez Veros Red Crianza

Crianza must remain in an oak barrel for 12 months, and at least the same time in the bottle.

Red Crianza 2013

Visual phase
Intense cherry red.

Aromatic phase
Clean notes of ageing: vanilla and toffee base, aromas of dough, toasted bread and coffee. There are notes of ripe berries, preserves, plum and cherry. As the wine breathes, floral and balsamic aromas emerge.

Gustatory phase
Pleasant and enveloping on the palate. Warm early sensations give way to intense tannins with a long, enveloping aftertaste.
